I went with greatshield + greatsword, focusing on breaking stances and crit-hitting via guard counters, charged attacks and weapon art (Redmane Flames). My build isn't always optimal, e.g. against Malenia. Obviously I can't always guard against her, and having fewer attack windows (in phase 1) means less stance breaking.
